On February 17^th, we catered a beautiful wedding at the Jeune Lune, located in Minneapolis. The Briscoe’s Wedding theme was romantic and chic, with 215 guests in attendance. The space was perfect for the occasion and the floral and decor throughout the venue was breathtaking! Guests mingled during cocktail hour and enjoyed delicious tray passed hor d’ oeuvres including:

• Coconut Curry Chicken Satay (Grilled chicken strips marinated in a coconut curry sauce served with a Thai citrus sauce)
• Bruschetta Caprese (Balsamic marinade tomato, fresh mozzarella, basil, caramelized onion and garlic on an herb toasted baguette)
• Sesame Seared Tuna (Ahi tuna seared with sesame atop a wonton crisp with wasabi mayo and cilantro)
• Veggie Roll (Carrots, cucumber, cooked spinach and asparagus wrapped with avocado)

Our client was looking for a wide variety of items that would accommodate both vegetarians and non-vegetarians. Our diverse menu offers a wide range of options to choose from, and is constantly evolving as our chefs find inspiration in new ingredients, techniques, and flavors. We were able to completely satisfy the newlyweds and guests with such an extensive selection.

The dinner service consisted of a delicious CRAVE buffet with a wide assortment of items, featuring the guest favorite, vegetarian lasagna. Later in the evening, after guests worked up an appetite from all the dancing, we provided a late night snack and hot chocolate bar, including mini veggie burgers, mini CRAVE burgers, mini root beer floats, and cheesy tator tots, which were a huge hit.
